Kathy Sue Jacops, 74, formerly of Amarillo, passed away on Thursday, August 13, 2026. Celebration of Life Services will be 2:00 PM Friday, August 28, 2026 at Cox-Rowley Funeral Home Chapel, 4180 Canyon Drive.
Kathy was born November 23. 1951 in Shenandoah, Iowa to Miles and Dorothy Merryman. She graduated from Shenandoah High School in 1970. Kathy married her husband Wesley Jacops on November 10, 1979 in Amarillo, and together, they enjoyed 46 years of marriage and raised three children, Beth, Jeff, and Dustin. Kathy worked as Elections Administrator for the Potter County Clerk’s office for many years. She was a former member of Pleasant Valley United Methodist Church and the Emmaus Community in Amarillo. Kathy and Wesley moved to New Boston, Texas in December of 2014, to be closer to family. While living there, the couple were members of TAPP United Methodist Church and Red Bayou Methodist Church.
Kathy loved teaching Sunday school and leading Bible studies, and she was very knowledgeable about the Bible. She also enjoyed baking desserts for birthdays and family gatherings. Kathy looked forward to Sunday dinners with her family and always made sure everyone was well fed. When she was not busy doing things, you could often find her reading a book, and she was never shy about sharing her opinion of one. Kathy dearly loved her grandchildren and was always ready for a game of Aggravation.
Kathy was preceded in death by her parents; and her son, Jeffrey Jacops.
Survivors include a daughter, Beth Jacops of New Boston; a daughter-in-law, Christina of Favetteville, NC; a son, Dustin Jacops and wife Jeanie of DeKalb; two brothers, Franklin Merryman of Amarillo and William Merryman and wife Tanya of Las Cruces, NM; and five grandchildren, Abigail Jacops, Jerrett Jacops, Chassie Jacops, Gracie Jacops and Dustin Jacops Jr.; and three great grandchildren.
